Sick of eating cereal and ramen for lunch and dinner? Want to spend less money eating out and finally start cooking for yourself? Put down that frozen pizza, because HC’s Health Editor, Sammie Levin, is here to share her daily eats so you can get ideas for healthy, satisfying meals that are easy enough for any time-strapped collegiette to make. After you read Collegiette Eats, your taste buds, wallet and waistline will thank you.

I was in Seattle for the weekend for my cousin's wedding, so I figured I'd show you those eats instead of the boring airport and plane food I ate on Monday on my way back to Ann Arbor. The wedding was Sunday late afternoon/early evening, so instead of three regular meals, I ended up having two big ones: a big brunch and an even bigger dinner. It was the first wedding I've ever been to, so I had to live it up.

Brunch

We ate at the hotel for brunch, where there was a huge spread and a fab omelet bar with any fix-ins you could want. I got an egg-white omelet with smoked salmon, spinach, basil, tomato and avocado. So yummy. I also had a plate with berries, pineapple and a little scoop of oatmeal. I wish I had more of the oatmeal; it was top-notch. I don't know how the chefs got it to be so thick and creamy, but I was into it.

Dinner

The wedding dinner was buffet-style with so many healthy options. I was pumped. I got salad (with pears, green beans and gorgonzola), roasted Brussels sprouts, sweet potatoes, quinoa and salmon. Everything was so good and the flavors mixed together really well. Even though I was full after dinner (and all the hors d'oeuvres that came before it, which included tons of delicious cheeses), I couldn't pass up dessert at a wedding. It was hard to decide which dessert to choose, but I ended up picking a slice of chocolate mousse cheesecake. It was so good that I forgot to take a picture in the heat of the moment, but I promise it was pretty.

This weekend involved a ton of eating, so I'm ready to get back into a healthy routine and not feel like I'm bursting at the seams. I plan on following my five ways to recover from an unhealthy weekend to get back on track!
