Researchers at the University of Illinois have engineered a groundbreaking new yeast with genes that can be altered—basically, what that means for us is that wine can now be changed not only to help us lose those pounding morning-after headaches, but also to increase wine's health benefits or even enhance its taste.
"Wine, for instance, contains the healthful component resveratrol. With engineered yeast, we could increase the amount of resveratrol in a variety of wine by 10 times or more," lead researcher Yong-Su Jin noted in a press release. Sounds like a win-win to us!
